Recipe by Ivano de Serio, Head Chef of The Old Bakery

Elderflower marinated fresh strawberries with summer berries consommé and black pepper cream

To make the consommé, wash all the berries and place them in a clean bowl with the icing sugar and mix gently. Put the bowl in a water bath (Bain Marie) and cook gently for 2 hours, do not stir the berries. When ready gently pour the berries and juice into a muslin and strain. Chill until needed.

Wash the strawberries, discard the top, cut them in 4 and place them into a non-reactive bowl with the liqueur and sugar and refrigerate for 3-4 hours.

Mix the cream with the icing sugar, vanilla and black pepper and gently whip until soft peak and chill for 1 hour.
