Soak the biscuits in strong coffee.
Mix the water and sugar and bring to the boil.
Once this comes to the boil pour over the eggs and whisk in a mixer until it quadruples in size.
Mix the cream, cheese and ameretto and whisk until thick.
Fold in the egg mix with the cream mix.
Lay the pre-soaked biscuit mix on the bottom and then add the cream on top.
Dust with cocoa and leave to set for 2-3 hours.
