Custard and apple tart

Ingredients:

For tart base:
100g flour
2 egg yolks
40g icing sugar
50g butter
½ teaspoon of vanilla extract
The zest of half lemon
Pinch of salt
2 Granny Smith apples peeled and diced
2 tablespoons of Demerara sugar
2 gelatine leaves
3 tablespoons honey
100ml milk
300ml double cream soft peak whipped
2 egg yolks
2 whole eggs

For the panna cotta:
125g Greek yogurt
200ml double cream
100g sugar
3 gelatine leaves
The zest of ½ lemon

For the mousse:
150g mascarpone cheese
75g icing sugar
1 tablespoon of pistachio paste

METHOD
The day before, make the panna cotta. Place the cream, sugar and lemon zest in a pan and gently heat to 70C. Soak the gelatine leaves in cold water for 5 minutes, squeeze the excess water and add to the cream. Mix well and strain through a sieve, add the yogurt and chill until set.

Mix all the ingredients for the tart case quickly and roll on floured surface. Cut 4 discs with the stainless steel rings and bake at 180C until golden in colour.

Place the Demerara sugar with the apples in a pan and cook on low for 3 minutes, add 100ml water and cook until puree like.

Place the egg yolks and eggs in a bowl with the honey and with the help of an electric whisk, whip until pale and fluffy.

Soak the gelatine in cold water for 5 minutes, squeeze the excess water and add to the milk. Gently heat to 60C and add the apple puree.

Add the mixture to the egg and mix well. Gently fold the soft whipped cream in and pour on the 4 rings with the biscuit base. Refrigerate for 4 hours before serving.

Place all the ingredients for the pistachio mousse in a bowl and whisk until firm. Refrigerate until needed.

Grantham school joins Carol Service in celebration of town’s hospitalPupils from St Mary’s Catholic Voluntary Academy are taking part in the first Carol Service to celebrate the special relationship Grantham and District Hospital has with the town and surrounding communities.The school children will join in the singing of favourite Christmas Carols as well as perform their own set musical piece at the Carol Service on Thursday 11th December at 7pm, in St Wulfram’s church, Grantham.Deputy Head Teacher Olivia Mumford said: “The Carol Service is a fantastic opportunity for our pupils to share the joy of music while showing appreciation for the incredible work done at Grantham and District Hospital.
