Poached Turkey and Lincolnshire sausage roulade

Ingredients:

4 large slices of turkey breast
200g Lincolnshire sausage meat
300g salted butter
600g Brussels sprouts
200g cooked chestnuts
2 cloves garlic, sliced
Salt to taste
2 shallots, diced
8 slices of bacon, diced
500ml Madeira
1 tablespoon tomato puree
1 teaspoon flour
Small pinch of coriander powder
Salt and ground white pepper to taste

METHOD
Beat the turkey slices with a meat hammer, place on a large sheet of cling film, season with salt and pepper and add the sausage meat in the centre. Roll like a sausage and wrap tightly. Wrap again in cling film and poach in boiling water for 45–50 minutes.

Drain and let cool slightly, unwrap and slice to serve.

Meanwhile melt 100g of butter in a deep based pan, add the bacon and shallot, cook on low for 5 minutes, add the flour and toast for 1 minute on medium heat. Wet with Madeira and add the tomato puree. Cook for 10 minutes and season with coriander and salt.

Melt the rest of the butter in a sauté, add the chopped garlic and chopped chestnut and cook for 2 minutes.

Peel and slice the sprouts, add them to the chestnut and cook on high heat for 2–3 minutes. Season and serve.

Grantham school joins Carol Service in celebration of town’s hospitalPupils from St Mary’s Catholic Voluntary Academy are taking part in the first Carol Service to celebrate the special relationship Grantham and District Hospital has with the town and surrounding communities.The school children will join in the singing of favourite Christmas Carols as well as perform their own set musical piece at the Carol Service on Thursday 11th December at 7pm, in St Wulfram’s church, Grantham.Deputy Head Teacher Olivia Mumford said: “The Carol Service is a fantastic opportunity for our pupils to share the joy of music while showing appreciation for the incredible work done at Grantham and District Hospital. It’s a privilege to support such an important event in our town."The Carol Service has been organised by United Lincolnshire Hospitals Charity, who work closely with staff at Grantham and District Hospital and provides those extras for staff and patients that NHS budgets are unable to fund.
