Elderflower marinated fresh strawberries

Serving size: 4
Preparation time: 10 minutes + resting
Cooking time: 2 hours
Ingredients:

600g of fresh strawberries
100g of caster sugar
200ml of elderflower liqueur (St Germain)
300ml of double cream
100g of icing sugar
1/2 teaspoon of freshly ground black pepper
1 teaspoon of vanilla essence

For the berries consomme:
200g of fresh strawberries
100g of blueberries
100g of raspberries
100g of blackberries
100g of icing sugar

METHOD
To make the consommé, wash all the berries and place them in a clean bowl with the icing sugar and mix gently. Put the bowl in a water bath (Bain Marie) and cook gently for 2 hours, do not stir the berries. When ready gently pour the berries and juice into a muslin and strain. Chill until needed.

Wash the strawberries, discard the top, cut them in 4 and place them into a non-reactive bowl with the liqueur and sugar and refrigerate for 3-4 hours.

Mix the cream with the icing sugar, vanilla and black pepper and gently whip until soft peak and chill for 1 hour.
