Blueberry and Lavendar Tart

Preparation time: 15 minutes
Cooking time: 40 minutes
Ingredients:

Ingredients for the tart case:
300g plain flour
120g icing sugar
180g butter
2 egg yolks
Pinch ground lavender powder
Pinch of salt.

Ingredients:
500g fresh blueberries
300g clotted cream
300g caster sugar
4 whole eggs
6 egg yolks
2 gold gelatine leafs
½ teaspoon ground lavender powder

METHOD
To make the tart case, mix all the dry ingredients in a bowl, add the butter and egg yolks and work quickly. Wrap in cling film and chill for 1 hour.

Grease and flour one 15-inch tart mould, roll the pastry and line the mould. With the help of a fork pierce the base of the tart, place a piece of baking parchment and cover with dry beans for blind baking, cook on 180C for 10-12 minutes.

Place the blueberries in a pan with 50ml water, lavender and the sugar and cook on low heat for 8-10 minutes. Blend and strain in fine colander.

Soak the gelatine leafs in cold water for 5 minutes, drain and squeeze the excess water, and add to the blueberry puree.

Add the rest of the ingredients and mix well, pour in the tart case and bake at 120C for 30-35 minutes, until the centre is firm. Cool down completley before serving.

Grantham school joins Carol Service in celebration of town’s hospitalPupils from St Mary’s Catholic Voluntary Academy are taking part in the first Carol Service to celebrate the special relationship Grantham and District Hospital has with the town and surrounding communities.The school children will join in the singing of favourite Christmas Carols as well as perform their own set musical piece at the Carol Service on Thursday 11th December at 7pm, in St Wulfram’s church, Grantham.Deputy Head Teacher Olivia Mumford said: “The Carol Service is a fantastic opportunity for our pupils to share the joy of music while showing appreciation for the incredible work done at Grantham and District Hospital. It’s a privilege to support such an important event in our town."The Carol Service has been organised by United Lincolnshire Hospitals Charity, who work closely with staff at Grantham and District Hospital and provides those extras for staff and patients that NHS budgets are unable to fund.
