Granola with lemon and honey

Cooking time: 15 Minutes
Ingredients:

500g jumbo oats
100g sugar
100g honey
100g butter diced
100g mix of poppy seeds, linseeds, sunflower seeds and crushed pistachios
3 lemons, zested and juiced
100g sugar
100g yoghurt
100g water

Firstly, make the granita: take the 100g of sugar and water and bring to the boil, add the lemon juice and yoghurt.

Freeze into a long container in the freezer until set.

Preheat the oven to 180°C.

Now onto the granola: simply mix all the ingredients together in a bowl.

Spread over a baking tray lined with parchment evenly.

Bake until golden brown, stir occasionally to cook evenly.

Leave to cool and try not to eat before.

Pro tip: add a splash of colour with lemon balm or wood sorrel.
